Put blanched almonds, a little oil and sea salt in a pan. Bake at 180°C (fan oven 160°C) mark 4 for 10 minutes.

I made these delicious canapés for a dinner party recently and they were the stars of the evening! I prepare all my meals in about 15 minutes and the canapés come together in 20 minutes!
This recipe calls for pea pods to make rose canapés, but you can use regular pea pods! I used the sprouts at a dinner party, and they were just beautiful!

1. Suitable for vegetarians, vegans and meat lovers – you have tapenade canapés for vegans with no dairy or fish, pesto canapés for vegan vegetarians (as long as you use plant-based parmesan – haven’t you made parmesan vegan? ) and you have rose prosciutto canapés for your meat-loving friends. Everyone is happy!
2. People don’t believe their eyes – just look at them! And my photos don’t do it justice! I always love a recipe that doubles as a conversation piece.
3. All parts and components can be prepared in advance and assembled immediately before the party – I have all this ready in about 15 minutes and put in the fridge. Just before the party, it only takes 20 minutes to put everything together.
Prosciutto – See prosciutto separated by wrapping paper or plastic. The pieces easily overlap each other, so if they are not separated, you cannot cut into neat pieces.

Pesto – You can substitute store-bought pesto…but don’t! Do it yourself! 1000% better than what you can find in the store, trust me. Store-bought pestos are often full of preservatives and very oily. Fresh pesto is a dream and the texture is perfect for these canapés. You will see that it is not oily at all
Olive Tapenade – You can buy the best olives at the store instead of making it from scratch, but I’ll show you how to make it from scratch.
1. Make your olive bar. In a food processor, add just ¾ cup pitted Kalamata olives and process for about 15 to 20 seconds. Look carefully. You don’t want to be like Pat, it’s good to have style.
2. Make your pesto. In a food processor, add 1 cup fresh basil leaves (no roots), 3 Tbsp. 3 tablespoons freshly grated Parmesan cheese. olive oil, 2 teaspoons of white balsamic vinegar and 2 tbsp. Pine nuts (or pepitas). Process until it is finely chopped and close to oil. This should be about 4 tablespoons. Make sure to cover the pesto while you prepare your other ingredients or it will start to dry out.

3. Make your dough base. Use a cookie cutter to cut perfect squares or circles from each piece without any scratches. You want to cut it into 24 nice little pieces. Bake at 250 F (120 C) for 10 minutes.
4. Cut your potatoes. If you cut them into good pieces as per the shape, you will only need 3-4 small canapés.
5. Chop your cherry tomatoes. You need about 8 cherry tomatoes. Pick the smallest ones in the bunch and slice them nice and thin.
6. Cut your cucumber. You need about 4-5 pieces of cucumber. Cut each piece into small pieces like a radish.

8. Pack them well with herbs and some capers and arrange them on your plate.
9. Make your tapnadi canapés. With a small spoon or knife, add the appropriate amount of tapenade to the breads.
11. Make your own beautiful rose couches. Add plenty of chive cream cheese to the remaining bread.
13. Roll the rose. It may get a little dirty when turning, but don’t worry. Cream cheese sticks to bread.

These canapés are even tastier (and even better) at the next gathering, so if you don’t have time to prepare and assemble them before guests arrive, make the tapenade and pesto ahead of time and store them in airtight containers.
The tapenade can be made up to a week ahead and the pesto can be made up to 3 days ahead or frozen for up to 2 months!
Make sure you cut your little ones up to 12 hours in advance and store them in an airtight container. Then, half an hour before the guests arrive, simply cut your bread with a cookie cutter and start assembling. Easy as pie!
