Last week we went strawberry picking and since we were having so much fun, we accidentally picked 10 pounds of strawberries. When we got home, my husband immediately wanted to freeze his morning smoothies. My daughters objected and he agreed to give us a few pounds. Now their lunch boxes are filled with strawberries every day.

So with that I have to make strawberry macarons. These delicious macarons are crunchy on the outside, soft on the inside and filled with creamy strawberry buttercream in the middle. I sweetened it a little to emphasize the berry flavor.

These cookies take practice, and you’ll find each batch gets better the more you try them! They are similar to French Madeleines and Chocolate Eclairs. The more you make them, the more you know “how they work” until one day you become a master at printing them!

These cakes are delicious! They are the divas of the cookie-making world. They do not like moisture. They don’t like rain. And sometimes they don’t even like air conditioning or a very hot kitchen!

In a word, YES. There is only so much that can go wrong! Between the problems of under mixing and over mixing, baking time, cracks, lack of legs….and the list goes on!

So, I decided to see if I could create a no-nonsense French macaron recipe. A recipe that may take practice, but in the end it will cause less trouble and less effort for all of us. And friends, here it is!

French Macarons With Chocolate Buttercream Filling

Sifting almond flour (also called almond) and powdered sugar is an important step that is often overlooked. This will ensure that your dry edge mixture is as smooth and light as possible.

You will mix the egg whites with cream of tartar and granulated sugar to get a stiff glossy mixture.

Once the egg whites have reached stiff, glossy peaks, it’s time to add the food coloring.

I prefer gel food coloring, I think it’s easier to control how many drops you put in and it won’t mess up the volume you’ve created in your egg whites. But the color tends to fade with baking, so add a shade or two darker than the desired shade, during baking it will fade a little.

You will gently fold the almond flour mixture into the egg whites with a rubber spatula. This is usually where it can all go wrong. Getting a feel for when to stop is something that only comes with practice.

But if you get it (and you will!) the trumpets will blow and you will feel SO accomplished! There is nothing like seeing the success of soft macaron sheets, and the parts that do not stick to the pan and legs, come out of the oven!

This recipe makes 24 sandwiches. It’s best to use two bowls and a pipe to hit them all at once and let them cool on a sheet (see Tip #6 below). As opposed to leaving it in a pastry bag.

After sprinkling all the batter, tap the tray on the counter to release any air bubbles. This will also ensure a smooth top.

It is best to leave the dough on the tray for at least 20 minutes before putting it in the oven. This will make them slightly sticky to the touch. This is another secret to getting them to develop “legs” as the stickiness will force them to stand instead of spread out while in the oven.

Traditionally, macarons are filled with flavored butter, and the flavor can be as different as the color itself! But you can also fill them with jam, chocolate ganache, salted caramel or lemon curd. For this recipe, I use raspberry juice to create raspberry butter.

There is nothing like seeing the success of soft macaron sheets, with bottoms that do not stick to the pan, complete with legs, come out of the oven!

And believe me, it took several tries and many revisions to get it right! Yes, I’ve been “there!” did i mention these cookies can drive you crazy? But the more you practice, the more you will get until one day the trumpets will sound for you too!

, I was worried when I left the macarons to dry on the tray for thirty minutes to an hour, I was let down when I saw the macarons baking in the oven without any sign of the classic “legs”, and then I was crushed as I was. put the hot pans on my counter…  another macaroni fail. It’s like a slap in the face, a crushed dream, a complete failure.

At first, I set myself up for failure by using coconut sugar. The coconut sugar dried out the dough and flattened completely in the oven (to ~2mm high!) into sticky caramel-like pieces of sugar.

Replace 50 grams Dissolved Sugarcane Juice with Sucanat. Just remember that it takes a long time to dry before baking (~30 minutes more), and the resulting color will be brown. Two months of testing, about 80 hours in the kitchen to bake. Beating countless eggs and pounds of almonds and sugar, trying to produce not only good macarons, but also maca bugs that plague bakers.
