All of these recipes can be made using a jar and shaker. Just grab a jar with a tight lid (I use a jar with a wide mouth and a plastic lid), throw in all the ingredients and shake the chicken out of it until combined. There are a few recipes below that can be made smooth if you use a food processor or blender – but you don’t need to if you’re fine with a thicker dressing.
All the recipes below are dressed around one cup – enough to last a few days of salad, but not so much that it will go bad before you have a chance to use it. Use the dressing with milk within a week. Vinaigrettes can last two weeks or more in the refrigerator in an airtight container.
Each recipe below contains amounts for using fresh or dried herbs – you can use whole fresh, whole dried, or a combination of the two. Just remember that dried herbs will take a little longer to infuse their flavor into the dressing. A good rule of thumb is that if you use mostly fresh ingredients, you can get away with using your clothes in 15-30 minutes. If you are using mostly dry ingredients, it is better to wait 2+ hours to allow the flavors to develop. Let’s begin.
