One of my favorite spooky Halloween creatures is definitely a vampire. They are crazy but slick and even disturbingly elegant more so than say a mummy or a witch. I love them so I knew I had to come up with a vampire story for Halloween.
And instead of being cute or fun like my candy corn cookie bars or a fudge monster, I wanted to capture that elegant vampire fear with this vampire cake.
When I was coming up with this cake, I knew that I wanted to use a white cake to really capture the extra glow of a vampire since they cannot be exposed to sunlight or a chocolate cake like a play on the a black cape that you often see them wearing. . Yellow cake or other cake flavors don’t give me any of those vampires. In the end I went with a white cake though to highlight the blood colored icing that was dripping from this cake.
Chloe’s Vampire Diaries Cake
Instead of taking a shortcut by using a boxed cake mix, I made this white cake from scratch. It is quite simple to make a white cake. You need some basic ingredients and baking tools. To make this cake you will need some basic cake ingredients:
You may notice that there are no whole eggs in this cake. We are not using whole eggs to keep the cake nice and white. The egg yolks will give the cake a yellow tint.
To make the batter, start by beating the milk and vanilla together in a medium bowl and set aside. Then cream the butter and sugar together in a stand mixer until light and fluffy. In another bowl, combine the flour and baking powder.
Now, you can gradually add the milk and vanilla mixture and the flour and baking powder in the bowl of the stand mixer. Be sure to alternate between adding the wet and dry ingredients.
Spookily Easy Halloween Cake Ideas To Make At Home
While adding the ingredients to the stand mixer, keep the mixer on low speed to slowly incorporate the ingredients together.
Once the batter is combined, turn off the mixer. Then in a separate large bowl, beat the egg whites with a hand mixer until stiff peaks form. When stiff peaks form, gently fold the egg whites into the batter.
Now you are going to pour your batter into 3 9 inch round cake pans lined with parchment paper. Don’t bother lining the pans with parchment paper. This helps the cakes to release cleanly from the pans.
Then bake the cakes for 23-26 minutes or until a toothpick inserted in the center of the cakes comes out clean. Allow the cakes to cool completely. When the cakes are almost cool, you can make your icing.
The Vampire Diaries Cake!
The vanilla frosting is super easy to whip up! Homemade buttercream doesn’t need much. Just butter, powdered sugar, vanilla, and a few tablespoons of heavy cream.
Once you have made the frosting, you can put 1 cup of the frosting into a large piping bag. Fit the rest of the frosting to cover the cake.
Once your cakes have cooled, carefully remove one of the cake pans and place in the center of the cake board. Then you can put some icing on the center of the cake and carefully spread it over the layer using a spatula. Make sure the ice is spread evenly. As a reminder, spread the ice – don’t destroy it! There is a risk of removing cake crumbs from cleaning.
Once you have set aside the first layer, take the second cake out of the cake pan and place it on top of the bottom cake. Repeat the icing process with this layer, making sure the cake layer is evenly covered. Then place the third layer on top of the second and spread that layer out to freeze.

Now that the top of the cake is melted, cover the sides with frosting as well, using a spatula to spread the frosting evenly over the cake. Then use the red cookie icing to bleed a little on the sides
